There’s an especially big catch of 15-minute meals in this chapter because I can’t think of anything that cooks up faster than a fish fillet; you practically have to try to spend more than 15 minutes cooking most kinds of fish! In fact, you could probably transform a bunch of the 30-Minute Meals into 15-Minute if you substitute some simple flavored couscous for the side dish accompaniment. Either way, you’ll want to keep a careful eye on your fish to prevent it from overcooking. Nothing is tastier than a crisp, moist piece of fish, and nothing is less appetizing than a dried out fillet! You’ll also find lots of Fancy Fake-outs and Date Night Dinners here, because there is just something a little bit special about a beautiful plate of seared scallops or nicely charred swordfish kebabs.
