There’s an especially big catch of 15-minute meals in this chapter because I can’t think of anything that cooks up faster than a fish fillet; you practically have to try to spend more than 15 minutes cooking most kinds of fish! In fact, you could probably transform a bunch of the 30-Minute Meals into 15-Minute if you substitute some simple flavored couscous for the side dish accompaniment. Either way, you’ll want to keep a careful eye on your fish to prevent it from overcooking.
